Viejo Tonel is a line of pisco from Peru. The Mosto Verde pisco is made from the quebranta grape and they claim that 21 pounds of grapes goes into each bottle. They regard their pisco as unusual in that they cease fermentation before all the sugar has converted to alcohol and then distill to 84 proof.
Single varietal Mosto Verde style Pisco distilled from the intense non-aromatic Quebranta grape. Mosto Verde differs from traditional Piscos in that the fermentation of the must is cut off before all of the sugar is converted to alcohol.
